In the Yorkshire Dales we are lucky to have a plentiful supply of native breed beef, pork and lamb along with some exceptional wild game and fish. The diverse landscapes that make up the Dales and the rest of North Yorkshire are perfect for rearing a wide range of livestock on rich pastures, woodland and moorland.
Our meat comes from farms where the animals are perfectly suited to their environment and are allowed to grow slowly and naturally. Out of respect for these animals, and the farmers that have cared for them, we believe that the whole animal should be used without waste.
Making charcuterie and salumi is a way for us to use the less popular cuts to make a fantastic range of products for you to enjoy.
